Apple X-Serve uses a non-standard RAID configuration to spread data across the disks in the RAID array. The parity/block-map is not the same as standard RAID-5 configurations.
To successfully recover data technical staff with the appropriate experience are required to manually analyse the distribution of data across the disk set. There is no software commercially available which can automatically establish the RAID parameters on an X-Serve.
